The estate covers 243 hectares, around 100 hectares of which are planted with vines. There is an elevation difference of about 235 metres between the lower areas and the highest point of the property. The upper vineyards reach around 370 metres above sea level and offer wide views across the Cape Peninsula towards False Bay and Table Bay.

The vineyards extend across slopes with different aspects, some of them steep. This creates numerous small zones with their own climatic conditions. The soils are predominantly derived from weathered Cape granite and vary in depth, structure and water-holding capacity according to the slope. Tielman Roos carefully matches grape variety, rootstock and training system to each individual site.

In the cellar, Louis Roos follows a classic and restrained approach. Depending on the wine, natural fermentation, wild yeasts, small French oak barrels and only light filtration may be used. The focus is on clear provenance, lively fruit and firm structure, allowing the wines to develop well in bottle.

The range includes Chenin Blanc, Chardonnay and Sauvignon Blanc, as well as red wines from Pinotage, Cabernet Sauvignon, Merlot, Cabernet Franc and Shiraz. The Pinotage comes in part from bush vines on an east-facing granite slope at around 250 metres above sea level. It combines ripe plum fruit with a full body and an accessible tannin structure.

The Mercia Collection is the estate's more ambitious range. It includes Houmoed Chenin Blanc, produced only in selected vintages, Cabernet Sauvignon Tabakland, the Bordeaux blend Rosalind and the sparkling wine Duel Cap Classique. Part of the estate is also designated as a private nature reserve, where fynbos and other indigenous plant species are protected across around 70 hectares. At Vin Africa, Mooiplaas represents a historic Stellenbosch estate whose wines clearly reflect the high-altitude sites and granite soils of the Bottelary Hills.
