Vinification:
To increase complexity, at least 30% of the wine comes from Pinotage fermented with wild yeast, predominantly from older vines, and matured for up to 12 months in American oak barrels. The remaining Pinotage is fermented in stainless steel to preserve freshness, fruit and liveliness. This combination of oak and stainless-steel maturation gives the wine depth, structure and balance.
