Vinification:
Viognier, Chardonnay and Semillon matured in second- and third-fill French oak barrels and remained on the lees for four months before being blended with the fresh Chenin Blanc component. A small proportion of the final Candide blend also matured in Nomblot concrete eggs and terracotta amphorae.
 
Food pairing:
Stone fruit, Fattoria ham and sweet seasonal peas.
