Vinification:
The individual grape varieties are vinified separately in order to bring out their respective characteristics with precision. After controlled fermentation, they are carefully assembled into the final blend (‘Collage’), balancing fruit, structure and spice. Partial maturation in oak supports complexity without masking the freshness and origin of the wine.
