Creation Estate Chardonnay shows a complex bouquet of ripe quince, pear, yellow apple and peach, gently underlaid by fine vanilla and citrus nuances. On the palate it is mineral-fresh, balanced and supported by lively acidity. Winemaker: Jean-Claude (JC) Martin
 
Vinification:
This Burgundian-style Chardonnay matured for 10 months in oak, 30% in new and 70% in used barrels. The lees were stirred every two weeks, bâtonnage, giving the wine additional roundness and complexity.
 
Food pairing:
A refined partner for rich fish such as turbot fried in butter, and an excellent choice with crab and king prawns.
