Creation Estate Cool Climate Chenin Blanc comes from the cool Hemel-en-Aarde Ridge, where particularly clear, finely structured and mineral wines are produced. Its bouquet is layered, with ginger, tomato leaf, apple skin and honey, complemented by lime and quince. The palate shows green apple, delicate coconut creaminess and increasingly saline minerality; subtle oak influence adds texture without becoming prominent in flavour. Vinification:
The grapes come from a 15-year-old vineyard in the higher, cooler part of the Hemel-en-Aarde Valley. The wine matured for seven months in older French oak barrels.
 
Pairs well with:
Gravlax or pancetta with fried spring onions and leeks.
