Groot Constantia Cabernet Sauvignon 2023 from Groot Constantia comes from the Western Cape. The red wine combines dark fruit, spice and a structured style with a distinctly South African character. The blend is made from 90% Cabernet Sauvignon, 7% Cabernet Franc, 1.5% Shiraz and 1.5% Tannat.
 
Vinification:
After hand-harvesting, the grapes are fermented in stainless-steel tanks with regular pump-overs during fermentation. The wine remains on the skins for four weeks and undergoes malolactic fermentation in stainless steel. It then matures for 14 months in 225-litre French oak barrels, including 53% new barriques as well as second- to fourth-fill barrels.
