On the palate, the wine is juicy and taut, with lively acidity, pronounced minerality and a finely balanced structure. Vinification:
The Sauvignon Blanc grapes are harvested at optimum ripeness and handled gently to preserve freshness and aromatic intensity. Temperature-controlled fermentation focuses on retaining the variety's characteristic fruit aromas and natural acidity. Oak is deliberately avoided during maturation so that clarity, tension and the mineral character of the terroir remain unmasked.
