This Cabernet Sauvignon from Franschhoek has a powerful yet elegant style with depth and precision. The nose reveals blackberries, blueberries and cassis, accompanied by fresh tobacco leaves, black liquorice, cedar and fine spice. On the palate the wine is rich and full, with complex dark fruit, pronounced structure and remarkable breadth. The tannins are fine and well integrated, while the texture is dense yet supple. Vinification:
The grapes are harvested at optimum ripeness and traditionally fermented to bring out fruit intensity and tannin structure precisely. The wine then matures for 22 months in 225-litre French oak barriques, 30% new and 70% second- and third-fill. This ageing gives the wine depth, structure and fine oak notes without dominating the fruit and supports a long-lived, balanced style.

Slow-braised oxtail with butter beans or rosemary lamb chops with new potatoes.
