Paserene Chardonnay 2021 from Paserene comes from Elgin. The white wine shows freshness, clear fruit and a calm, balanced structure. Chardonnay defines the wine.
 
Vinification:
The hand-harvested grapes are gently pressed. After a short resting period in stainless steel, spontaneous fermentation takes place in French oak barrels. The Chardonnay matures for 24 months, with around 30 percent used barrels.
