Spier 21 Gables Chenin Blanc appears pale golden yellow with brilliant highlights. The bouquet is complex and elegant, with notes of white peach, ripe pear and fine marzipan. Nuances of vanilla, subtle smoke and gentle oak spice follow. On the palate the wine is powerful yet precisely structured. Vinification:
The grapes were selectively hand-harvested in five passes between 3 and 15 March to capture parcels at different stages of ripeness optimally. After harvest in small 20-kg crates, the grapes were pre-cooled, carefully sorted, destemmed and gently pressed. Skin contact lasted up to six hours and the free-run juice was allowed to settle overnight. Fermentation took place in a combination of 300-, 400-, 500- and 2,500-litre French oak barrels. Different barrel sizes were deliberately used to create varying oak influences that were later harmoniously blended. The wine matured for 10 to 12 months in oak barrels (50% new oak, 50% second-fill).Food pairing:
