Spier in Stellenbosch produces this elegant South African sparkling wine as a Méthode Cap Classique using traditional bottle fermentation. Chardonnay and Pinot Noir give it structure, finesse and depth. In the glass it is pale straw-coloured with fine, persistent bubbles. The nose reveals aromas of fresh apple, citrus and a hint of brioche. On the palate it is lively and balanced, with fine acidity, a creamy texture and a clean, refreshing finish. Vinification:
The grapes were harvested at 18°–20° Balling in 9 kg crates and carefully hand-selected. Whole-bunch pressing yielded 90% of the must. Fermentation took place mainly in stainless-steel tanks, with 10% fermented in 400-litre French oak barrels. Secondary fermentation took place traditionally in the bottle. The wine then matured on the lees for at least 20 months before disgorgement.Food pairing:
