A classic Méthode Cap Classique made from 100% Pinot Noir, combining South African fruit with the precision of traditional bottle fermentation. In the glass it shows a delicate salmon-pink colour with fine, lively bubbles. The nose is clean and inviting, shaped by red berries such as strawberry and raspberry with a hint of pomegranate, underlaid by subtle notes of brioche and flowers. On the palate it is dry and precise, with taut, well-integrated acidity and a fine, creamy texture from lees ageing. The fruit remains fresh and elegant throughout, while the finish is clean, mineral and pleasantly persistent. An MCC with style and balance, ideal as an aperitif and versatile at the table. Vinification:
The grapes come from selected parcels in Stellenbosch and Robertson and are harvested in the cool morning hours. After gentle pressing, the base wine is made in stainless-steel tanks. Secondary fermentation takes place traditionally in the bottle. The wine then matures on the lees for 14 months, giving it fine bubbles, subtle brioche notes and additional structure.Food pairing:
