Spier Signature Sauvignon Blanc 2025 benefits from the cool sea breeze from the ocean only around 25 kilometres away. Moderate summer temperatures and planting on south-facing slopes give this wine its distinctive freshness and precision. In the glass it is straw yellow with greenish highlights. The bouquet reveals aromas of gooseberry, passion fruit and green fig, complemented by fine notes of green pepper. Lively and clearly structured on the palate, with nuances of rhubarb, minerality and a hint of flint. A dry, expressive Sauvignon Blanc with invigorating acidity and elegant length. Winemaker: Frans Smit
Vinification:
The grapes were harvested in the cool morning hours to preserve freshness and aromatics. After gentle processing, fermentation took place under temperature-controlled conditions in stainless steel. Slow, cool fermentation emphasises the varietal fruit and gives the wine its clear structure and lively acidity.
