Springfield Whole Berry Cabernet Sauvignon is made using a traditional method. The hand-harvested grapes are fermented without pressing using wild yeasts. The nose shows dark berries, especially blackberries, while the palate reveals cassis, blackberries and cloves. A velvety Cabernet with soft tannins and perfectly integrated oak notes. Vinification:
The whole grapes ferment with wild yeast. The wine then matures for 12 months in first- and second-fill French barriques and is bottled unfined and unfiltered.
 
Food pairing:
Perfect with lamb with rosemary and thyme or braised chicken with olives.
