| Vinification: | The grapes were hand sorted and whole bunch pressed before being taken to 3 year old barrels for fermentation. After 2 months in barrel the base wine was bottled and crown capped by hand. The wine was matured on the lees for 4 years before disgorgement, with no dosage added and onlay a topping to fill the bottle. |
