Cap Classique holds a special place among South African sparkling wines. The term is reserved for sparkling wines in which the second fermentation takes place in the bottle. Since the 2023 vintage, additional quality requirements have applied. These include whole-bunch pressing, at least twelve months of lees ageing and the removal of the yeast through disgorgement.

Chardonnay and Pinot Noir are among the most important grape varieties used for Cap Classique. Pinot Meunier is also used, but South African winemakers work with a wider range of varieties to create their own distinctive styles. Chenin Blanc and even Pinotage can be used for special bottlings.

The different wine regions of the Cape produce a broad range of styles. Robertson is known for its limestone-rich soils and Chardonnay, while Stellenbosch offers a wide variety of vineyard sites. Cooler areas such as Elgin and the Hemel-en-Aarde Valley allow for slower ripening and help preserve freshness and natural acidity in the base wines.

The length of lees ageing also has a major influence on character. Younger sparkling wines often show fresh citrus, apple and delicate floral notes. With longer bottle ageing, aromas of brioche, pastry, toasted nuts and yeast can develop. Alongside classic Brut blends, there are Blanc de Blancs, Rosé, Blanc de Noirs, longer-aged styles and slightly fruitier expressions.

Not every South African sparkling wine is a Cap Classique, however. Tank fermentation and other production methods are also used. The term Cap Classique therefore provides a clear distinction and indicates traditional bottle fermentation together with the production standards that apply to it.
